Carlos Carballo
Asian born, trained in Europe and now finding his home in Canada. With over 20 years of experience, Carlos Carballo has honed his skills from multiple residencies including the prestigious European Continental Hotel to the exclusive Granite Club in Toronto. His menus and methods quickly gained the attention of The Substance Food Group and became a key player in their upscale catering events. Since then a flourishing partnership developed into the creation of Francobollo in 2017.
From the creators of Terra, Rusty’s and Sarpa restaurants comes Francobollo Posto Italiano. Although rooted in the classics this modern, casual, neighbourhood gem distinguishes itself from others with warmth and sincerity, present in all area of your dining experience.
